Day-After Do's and Don'ts


For many of us, it's not the turkey on Thanksgiving that we love so much, it's the leftovers! Here are some guidelines on how to use those leftovers in new ways, and how to keep food safety in mind.

Do: Be creative and healthy! Leftover turkey is great in soups, wraps, and salads.

  • Spread cranberry sauce on a whole wheat tortilla, add sliced turkey breast, greens, and toasted pecans.

  • Use your leftover cranberries to make a smoothie by combining them with frozen yogurt and orange juice.

  • Leftover stuffing can be combined with eggs and made into frittatas (cook them like pancakes).

Do: Freeze leftovers for later

Leftover turkey can be frozen in smaller containers for later use. These can be used later in soups and pasta dishes.

Don't: Keep leftovers out too long.

Refrigerate all leftovers within 2 hours of serving, and make sure extra meat is carved off the bones before storing. Smaller containers are always better for cooling food more quickly.

Most Thanksgiving leftovers will be safe in the refrigerator for 3-4 days, and for about 2 months in the freezer (remember that freezer times are for quality only--foods that are constantly frozen at zero degrees will be safe indefinitely.)
